Everyone loves a bit of beef, and if you don’t eat beef, you should. This juicy brisket is just what any meat lover needs. What’s not to like: slow cooked juicy beef, sticky dark guiness sauce, and cold beer to wash it down.

Beef Brisket & Guinness Barbecue Sauce

Ingredients

  • 1 cup tomato passata tinned tomatoes
  • 2 cups Guinness
  • 1 tsp. cayenne pepper
  • 1 tbsp. salt
  • 1 tbsp. chilli powder
  • 1/4 cup brown sugar optional
  • 1 tbsp. pepper
  • 1/2 cup cider vinegar
  • 6 garlic cloves mashed
  • 3 tbsp. olive oil

The Rub

  • 2 tbsp. paprika
  • 1 tbsp. garlic powder
  • 1 tbsp. onion powder
  • 2 tbsp. chili powder
  • 1 tbsp. salt
  • 1 tbsp. cayenne pepper
  • 1 tbsp. black pepper
  • 1 tbsp. cumin
  • 1 tbsp. dark brown sugar (optional)
  • 2 tsp. ground coriander
  • 2 tsp. oregano dried
  • 2 tsp. thyme dried

Equipment

  • Smoker Digital Thermometer
  • Wood: Oak or Hickory

Instructions

Method

    Prep the smoker/Grill

      The Rub & Brisket

      • Trim as much of the fat off the briske. It’s OK to leave a thin layer but not too much.
      • Mix all of the rub ingredients in a bowl.
      • Rubs the brisket with the mixture.

      The Guinness Barbecue Sauce

      • Mix all the ingredients in a saucepan, bring the boil and then simmer until it has reduced and thick.

      The Smoking

      • Place the brisket in your smoker over a water pan .
      • Smoke at 225° F until the internal temperature reaches 150° F.
      • Then wrap with foil and return to the smoker and smoke until you reach an internal temperature of around 200° F. The total smoking time should take about 15 hours.
      • Wrap it in towls and place in a cooler for 1-2 hours.
      • Slice across the grain and serve with the barbecue sauce.
