A big thanks to Big G for passing this recipe to me. You wouldn’t think it, but these are great. You’ve got to try these. If you’re not into caffiene, don’t worry; just use decaffeinated coffee. Trust me you’re gonna love them.

Big G’s Coffee Ribs

Ingredients

  • 1 Rack of Ribs

Coffee Rub

  • 3 tbsp. smoked paprika
  • 1 tbsp. Salt
  • 1 tbsp. ground black pepper
  • 1 tbsp. garlic powder
  • 1 tbsp. freshly ground coffee

Equipment

  • Smoker
  • Digital Thermometer
  • Wood: Apple or Cherry (Your choice)

Instructions

  • Prep the smoker/grill

The Rub & ribs

  • Mix all of the rub ingredients together in a bowl. Make sure they are evenly mixed.
  • Trim off any loose fat and meat.
  • Remove the membrane from the underside of the ribs.
  • Cover the ribs with the rub and rub it into the meat. Make sure it completely covers the ribs.
  • Season with salt & pepper.

The Smoker/Grill

  • Place your water pan on one side of your grill and fill with water.
  • Pour your coals on the other side. You will need a mixture of hot and cold coals, so you get a slow and steady burn. Experiment with your grill and see what is best. With mine, I place them in a row and they slowly burn down the row.
  • Lay 2-3 pieces of wood down the line of the hot and cold coals to ensure that you get a steady slow burn of smoke for the first few hours.

The Smoking (3-2-1 Method)

  • Place the ribs on the grill above the water tray and smoke at 225° F for three hours. Make sure you rub them with butter every hour to keep them moist.
  • After three hours, remove the ribs, wrap them in a couple of pieces of foil and return them to the grill for two more hours at 225° F. This will ensure that they fall off the bone.
  • Remove the foil and return to the grill for one more hour at 225° F.
  • Serve hot with the remaining sauce and some awesome sides.
